Good morning! It's shaping up to be another hot one today so I am trying to get things done early...partly to beat the heat and partly because I'm babysitting Colton this morning while Leah goes to the dentist. I'm hoping Colton and I can get in some pool time. Usually, when the kids are here Leah won't allow me to do anything but catch her as she jumps off the steps. Colton tends to get a bit short-changed in the attention department. He needs some one on one with Nanny today.
So, let's get at my Thankful Thursday post. Thanks again to Jen, for taking over hostess duties while Rebecca Jo is taking some time off.
This week finds me thankful for...
** Finally feeling like my old self and for the inhaler my doctor prescribed to help me get over the cough that always seems to linger any time I get sick these days.
** Time spent with my mom canning green beans. Not the most fun job in the world, but we don't get to do that many things like that these days. We used to do a lot things like that when my dad was alive because he had a huge garden every year.
** Getting to pass on old-fashioned things like snapping green beans to Colton and Leah. They helped me and while they are still pretty little and not the best at snapping the beans at normal sizes, but they thought it was fun and we had a good time working together and they got to see some of what goes into putting food on the table.
** I got the freezer organized and started on the pantry. I hope to finish that today.
** Mom is getting her basement waterproofed today. In preparation she had to remove a lot of stuff and have a plumbing and heating service come move the hot water tank. The tank sprung a leak last week, which while not really a GOOD thing was a good break...better before they took it out than after they put it back. Now they can just put a new one in when they come back.
** Our daughter clipped the cat's claws for me. He fights so much and I'm afraid of hurting him. Sometimes I have to help hold him, but she does it very quickly and it's over almost before he knows what hit him.
** Meals abounding with summer's bounty...tomato sandwiches, corn-on-the-cob, green beans, cantaloupe, peaches, fried zucchini. YUM!
** A new recipe that was easy and a success (it's posted at the end).
** Getting to be out and about after being cooped up with covid.
** Finding 2 nice tunics at Goodwill today.
** My family and friends who just bless my life.
** And, of course, all of you who stop by to visit!
*RECIPE FOR THE BEST ROUND STEAK EVER*
1.5-2 lbs of round steak, cut into individual serving pieces with most of the fat trimmed
Flour
Salt
Pepper
Mushrooms, fresh or canned
Pla
1 pkg Lipton's Onion (or Beefy Onion) Soup Mix
Put a small amount of flour on a plate, add salt and pepper to taste, stir together. Place round steak in flour, flipping to cover both sides. Place steak in hot skillet with some butter and brown nicely on both sides. Place steak in bottom of 13 x 9 baking dish. Place mushrooms in skillet and cook just until tender. Pour mushrooms, any liquid, and pan scrapings over steak. Pour water into baking dish, about 1/4 inch deep. Sprinkle the soup mix over the meat and mushrooms. Sprinkle with salt and pepper to taste. Cover with foil. Bake at 350 degrees for an hour to an hour and a half.
Love your list of thankfuls today. I loved seeing the picture of the green beans being canned. How wonderful the little ones got to help snap the beans! That will make eating them even more fun when they remember that they helped! I love hearing stories like that! So happy you are feeling better and getting back to some kind of normal. Oh, your summer's bounty meals sound so good. I miss that. We just haven't had the good fresh veggies around here this summer. I need to find a good fresh vegetable market somewhere. The one we did have quit doing it due to health reasons, and the stuff at the grocery store just isn't as good. I wish I knew someone who had a garden and wanted to share! LOL.
